Teal paint, dark-stained cedar and a stainless service kitchen built for tacos and nachos at Anakeesta in Gatlinburg, Tennessee.

Anakeesta’s food and beverage team came to us with a specific operating plan: prepare food elsewhere, bring it to the mountaintop, and assemble orders inside the trailer. Smoked meats would be held hot and ready to serve, with space for two to three staff members working through a busy service.

We built a custom Topeka trailer around that plan, bringing hot and cold holding, preparation space and counter service into one compact kitchen.

Built around the service line

The hot well and cold well were central to the layout. We coordinated their openings in the custom stainless steel counters. Hot and cold holding, stainless preparation counters and accessible storage support the team’s taco and nacho service, while open wall shelves keep supplies to hand without taking up counter space.

The trailer was designed for connections to the park’s electrical service, water and sewer. Large opening service windows connect the kitchen with the customer-facing counters outside.

Cedar, teal and a practical alternative to tile

Anakeesta’s team chose a green upper exterior with wood below, bringing the trailer’s rounded profile into the park’s mountain setting. We added dark-stained cedar beneath the service window, wood window trim and an exterior serving shelf supported by stainless folding brackets.

Inside, the team wanted the appearance of white subway tile with matching wood shelves. We recommended architectural wall panels with a subway-tile look, avoiding the additional weight and potential cracking of ceramic tile and grout in a moving trailer. The finished interior combines those white panels with dark-stained shelving, stainless counters and a reflective metal ceiling.

Vintage-style moon hubcaps complete the exterior.

A service point with its own character

The finished build gives Anakeesta a dedicated taco and nacho service point with its own recognizable character—and a kitchen planned around the way its team prepares, holds and serves the food.
